Greek Tomato And Feta Camping Pasta Salad Recipe


Ingredients

For the dressing

  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon dried basil
  • 1 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper freshly ground
  • 1/2 teaspoon white sugar

For the veggies

  • 4 pepperoncini peppers (see Note #1) jarred in brine, sliced into bite sized rings
  • 1 (10 oz) package cherry tomatoes halved
  • 1/2 red bell pepper diced
  • 1 cup crumbled feta cheese
  • 3 green onions chopped
  • 1/2 cup sliced Kalamata olives

For the pasta

  • 1 (6 oz) box Bowtie pasta cooked according to package directions

Instructions

  1. Cook the pasta according to package directions.
  2. Make the dressing by shaking in a salad shaker or by whisking ingredients in large bowl. Set aside.
  3. Chop the veggies.
  4. Toss all ingredients together. Then cover and chill. These flavors get better with time so it’s great to make this the day before you are going to serve it.
